Instructions

Thai ribs

Recipe Provided by Zea Rotisserie & Grill

Entrée portion:

Thai sauce:

¼ cup sweet soy sauce

¼ cup regular soy sauce

¼ cup sweet chili sauce

2 tbls minced fresh garlic

*all 3 sauces available in Asian markets

Herb blend:

¼ cup cilantro

¼ cup basil

¼ cup chopped green onions

Basic rib procedure:

St. Louis Style Ribs (12-16 count bones)

Spread on top 1 tbls of kosher salt

1 tbls black pepper

Wrap tight in foil

Roast in a 200 degree oven for 2 hours

Remove from oven and cool completely

Rib grilling procedure:

On your grill, put cooled ribs bone side down

Brush sweet marinade on top side

Allow to sit on fire until ribs underneath are slightly charred

Flip ribs over

Slightly char meat side

Flip ribs over

Glaze meat side again with sauce

Cut ribs in half

Evenly distribute herb blend garnish

Add a sprinkle of sesame seeds

TUNA STEAK WITH ORANGE BASIL BUTTER

Recipe Provided by Zea Rotisserie & Grill

To Marinate the tuna:

Sushi Grade Ahi Tuna Steaks (10 wz steaks)

Zea Rotisserie & Grill Thai Rib Sauce (available at the restaurant or Rousse’s Supermarkets)

1.        Pour thai rib sauce in the bottom of a bowl. 

2.        Place tuna steaks in the bottom of the bowl in a single layer.

3.        Pour in enough stir fry sauce to submerge the tuna.

4.        Marinate the tuna in the refrigerator for 30 minutes.

To Make the Orange Basil Butter:

½ pound Salted Butter – room temperature

2 Tablespoon Orange Juice Concentrate

1 Tablespoon  Ginger – peeled and minced

1 Tablespoon  Soy Sauce

1 Tablespoon Basil Ribbons – 1/8” ribbons

¼  Teaspoon  Cajun Seasoning

1.  Measure all ingredients into food processor.

2.  Whip until smooth.

To Cook:

½ vz. Vegetable Oil

½  Teaspoon Kosher Salt  ( on each side)

½  Teaspoon Black Pepper ( on each side)

1 Each Marinated Tuna Steak

1.        Add vegetable oil to a skillet and get the oil hot.

2.        Season both sides of your marinated tuna with salt & pepper.

3.        Place tuna into the skillet and allow to cook undisturbed until the bottom is seared, lightly browned, and the bottom 1/8” turns opaque.

4.        Flip and cook until the bottom 1/8” turns opaque.

This method yields a rare doneness.  Cook longer on both sides to get a high degree of doneness.

To Garnish:

1 Seared Tuna Steak

2 Tablespoons Orange Basil Butter

1 Tablespoon Basil Ribbons  (1/8” inch ribbons)

1 Teaspoon Chopped Cilantro

1.        Scoop room temperature orange basil butter on top of tuna steak.

2.        Sprinkle basil ribbons and chopped cilantro all over tuna.

WHAT TO DO

1.    in a large mixing bowl, fork mash potatoes to your desired texture

2.   with rubber spatula, fold in all other ingredients

3.   salt and pepper to taste

Ingredients
  • ½ teaspoon jarred horseradish
  • 6 tablespoons butter
  • 6 small yukon gold potatoes, skinned, quartered and boiled until fork tender
  • 2 nice pinches salt
  • 2 nice pinches pepper
  • 7 cloves roasted garlic puree
  • ⅓ cup half and half
  • 1 sprig oregano leaves
  • 1 teaspoon minced cilantro leaves

WHAT TO DO

ribeye

1.    preheat oven to 400 degrees

2.   heat grill to high heat

3.   in mixing bowl mix olive oil, salt, pepper, rosemary, parsley, garlic powder, minced garlic, and crushed peppercorns

4.   coat the crust’s edges thickly and generously with the garlic and herb mixture

5.    place crusted ribeye on grill and sear grill, flipping steak halfway through cook time, to your desired doneness

6.   brush thai bbq sauce onto surface of steak and serve

  • 22 ounce ribeye
  • ½ teaspoon salt
  • 1 pinch pepper
  • 3 tablespoon olive oil
  • 2 tablespoons freshly crushed mixed color peppercorns
  • 1 tablespoon minced garlic
  • 2 tablespoons rosemary leaves
  • 1 tablespoon minced parsley
  • 1 pinch garlic powder
  • ¼ cup store bought thai barbecue sauce
  • fresh cilantro leaves for garnish
