Turkey Sausage Hash

1. Preheat oven to 425 degrees. In a large cast iron skillet on medium–high heat, add butter, ham, onions, potatoes, squash and mushrooms. Sauté until vegetables start to caramelize about 5-8 minutes. Add garlic and thyme to skillet; cook until garlic becomes fragrant. Season with salt and pepper.

2. Place skillet in oven and roast until vegetables become fork tender. Stir vegetables at least once or twice during roasting for even cooking and browning, about 20-30 minutes. Remove from oven and spoon hash on a plate.

3. In a medium non-stick skillet over medium heat, add 1 tablespoon of butter. Crack eggs into pan and cook until eggs reach desired doneness. Season with habanero salt and black pepper. Drape eggs over hash and top with chives. Serve with avocado slices or your favorite condiments.

WHAT TO GET

3 tablespoons olive oil

1 yellow onion, small diced

1 green bell pepper, small diced

2 tablespoons fresh minced garlic

12 ounces lean ground turkey

1 tablespoon chili powder

1 tablespoon smoked paprika

2 nice pinches red chili flakes

3 tablespoons flour

⅓ cup of half and half

1 quart chicken stock

1 freshly diced tomato (for topping)

⅓ cup shredded cheddar cheese

1 tablespoon queso fresco (for topping)

1 ½ cups egg noodles

1 tablespoon brown sugar

⅓ cup whole wheat croutons

1 tablespoon minced parsley

1 sprig thyme leaves

2 sprigs oregano leaves

4 cloves whole garlic

¼ cup sliced scallions

salt and pepper to taste

 

WHAT TO DO

1.    In high heated dutch oven, stir in oil, onion, bell pepper, garlic, red chili flakes, flour, brown sugar, clove garlic, smoked paprika

2.   when vegetables caramelized, stir in turkey

3.   when turkey browns, add half and half, chicken stock, noodles, parsley, cheddar cheese

4.   stir occasionally and serve when noodles are tender

5.   garnish with tomatoes, croutons, queso fresco, and scallions

Ingredients

·      2 tablespoons butter

·      ⅓ cup diced onion, green bell pepper, and celery

·      1 pound smoked turkey sausage, diced

·      ½ tablespoon Scotch Bonnet pepper

·      1 tablespoon minced garlic

·      1 cup corn kernels

Method

- Sauté onions, bell pepper, celery and sausage until slightly browned. 

- Add Scotch Bonnet pepper, garlic and corn.  Continue cooking until tender.

Fried Turkey

Ingredients

·      1 whole turkey

·      Barbeque Cajun marinade

·      Herb Marinade (recipe below)

·      ¼ cup olive oil

Method

-      Inject turkey with barbeque Cajun marinade

-      Season turkey with olive oil and herb marinade

-      Drop the turkey in a deep fryer, and cook for 45 minutes to an hour

 

Herb Marinade

Ingredients

·      2 tablespoons olive oil

·      2 teaspoons parsley

·      Pinch salt

·      Pinch cayenne pepper

·      Pinch black pepper

Method

-      Whisk all ingredients together until combined

Method For Turkey Sausage

- Heat cast iron skillet over med-high heat and add olive oil

- Add onions, bell pepper and turkey sausage and cook for 2-4 minutes

- Add sun dried tomatoes, caramelized onions and tomato and cook for 2-3 minutes

- Add cilantro

- Stir all together and add to corn tortilla

- Top fajitas with Mustard Vinaigrette

Ingredients
  • Smoked Turkey Sausage
  • 2 tablespoon olive oil
  • 1 green bell pepper sliced
  • 1 cup caramelized onions- premade
  • 1 ½ onions sliced
  • ¼ cup sun dried tomatoes
  • ¼ cup cilantro
  • 1 tomato chopped
  • 4 corn tortillas
Instructions

Method

-       Place the ground turkey, green bell peppers, onions, Cajun seasoning, salt and pepper and form into 2 patties

-       Heat olive oil in cast iron skillet over medium high heat

-       Add turkey patties to skillet and cook for 6 minutes on each side

-       Add mozzarella and cheddar cheese to patties for last 2 minutes of cooking time to melt

-       Toast the hamburger buns in skillet for 1 minute

-       Spread reduced fat mayonnaise on buns

-       Place turkey patties on bun and top with avocado and tomatoes

  • 1 lb ground lean turkey
  • 1 green bell pepper chopped
  • 2 sliced reduce fat mozzarella cheese
  • 2 slices of reduced fat cheddar cheese
  • 2 tablespoon olive oil
  • ½ onion diced
  • 1 tomatoe sliced
  • 1 avocado sliced
  • ½ teaspoon Cajun seasoning
  • 1 tablespoon reduced fat mayonnaise
  • salt to taste
  • black pepper to taste
  • 2 hamburger buns
