Instructions

Method

-       Heat grape seed oil in pan over medium-high heat

-       Add yellow bell pepper, orange bell pepper, garlic, and jalapeno to skillet

-       Sauté for 1 to 2 minutes

-       Add shrimp, salt, pepper, Cajun spice, scallions and cook for 1 to 2 minutes

-       Add half and half, tomatoes, pasta, feta cheese and cook for 1 to 2 minutes

Ingredients
  • 4 tablespoons grape seed oil
  • 1/3 cup diced yellow bell pepper
  • 1/3 cup diced orange bell pepper
  • 2 minced garlic cloves
  • 1 jalapeno, diced
  • 1 cup baby shrimp
  • 1 cup half and half
  • ¼ scallions, chopped
  • 1 tomato, chopped
  • 2 pinches Cajun seasoning
  • 2 cups Whole Wheat precooked Penne Pasta
  • 3 tablespoons feta cheese
  • Salt and pepper to taste
Instructions

Method

-       Coat steak with grape seed oil, salt, pepper, cilantro, and garlic

-       Slice seasoned steak into strips, cutting on the bias

-       In a cast iron skillet heat 2 tablespoons olive oil over medium-high heat

-       Add steak strips, onions, banana pepper, and poblano pepper to the skillet

-       Cook for 3 to 5 minutes

-       Add both eggs to top of steak and cook 1 to 2 minutes

-       Add pepper jack cheese over top of eggs and steak

-       In separate skillet add remaining olive oil over medium-high heat

-       Cook tortillas till golden brown on both sides

-       Garnish steak and eggs with salsa fresca, queso fresco and cilantro

  • 3 tablespoons grape seed oil
  • 4 tablespoons olive oil
  • ½ pound skirt steak
  • Salt and pepper to taste
  • 2 minced garlic cloves
  • ½ onion, sliced
  • 2 organic eggs
  • 1 yellow banana pepper, charred & chopped
  • 1 poblano pepper, charred & chopped
  • 4 yellow corn tortillas
  • 2 cups readymade New Orleans red beans
  • ½ cup queso fresco
  • ½ cup pepper jack cheese
  • ½ cup readymade salsa fresca
  • 1 tablespoon chopped cilantro
Instructions

Method For Salad

-      Toss together mixed greens, peach slices, and toasted almonds dress

-      Top with feta cheese, salt, and pepper

-      Serve with Organic Honey Vinaigrette

Method For Vinaigrette

-      Whisk together apple cider vinegar, orange juice, honey, cilantro, red onions, and poppy seeds

-      Slowly whisk in the olive oil

-      Add salt and pepper for extra flavor

-      Serve with Southern Peach and Toasted Almonds Salad (recipe above)

  • 8 ounces baby spring mixed greens
  • ½ large peach, thinly sliced
  • ¼ cup sliced and toasted almonds
  • 1/3 cup crumbled feta cheese
  • Salt and pepper to taste
  • 4 tablespoons apple cider vinegar
  • 1 tablespoon freshly squeezed orange juice
  • 3 tablespoons organic honey
  • 1 tablespoon chopped cilantro
  • ¼ cup thinly sliced red onion
  • 1 teaspoon poppy seed
  • ¼ cup olive oil
