Ingredients

·      1 dozen medium butterflied shrimp

·      ½ tablespoon minced garlic

·      1 teaspoon black pepper

·      2 tablespoon charred and chopped poblano chilies

·      2 cups pre-cooked brown rice

·      2 scrambled eggs

·      2 tablespoon soy sauce

·      ¼ cup toasted cashews

·      ¼ cup low sodium chicken stock

·      1 tablespoon chopped cilantro

Method

-Sauté ingredients together for 3-5 minutes and serve

Instructions

Method

- Roughly chop the tomatoes, white onion and cilantro

- Toss together in a bowl and season with salt and pepper

- Garnish with sliced avocado

- Serve alongside beans and Cornish Hen
