Mashed Potatoes

Instructions

WHAT TO DO

potatoes

1.    in a large mixing bowl, fork mash potatoes to your desired texture

2.   with rubber spatula, fold in all other ingredients

3.   salt and pepper to taste

Ingredients
  • ½ teaspoon jarred horseradish
  • 6 tablespoons butter
  • 6 small yukon gold potatoes, skinned, quartered and boiled until fork tender
  • 2 nice pinches salt
  • 2 nice pinches pepper
  • 7 cloves roasted garlic puree
  • ⅓ cup half and half
  • 1 sprig oregano leaves
  • 1 teaspoon minced cilantro leaves
Instructions

Method For Mashed Potatoes 

-       Place potatoes in a pot of cold water seasoned with 1 teaspoon of salt and 1 teaspoon of pepper

-       Cook potatoes over medium heat until fork tender, about 20 minutes

-       Drain the water from the potatoes and mash with a fork

-       Stir in butter and blue cheese crumbles

-       Season with salt and pepper to taste

 

Method for Swiss Chard

-       Heat oil in a Dutch oven over medium heat

-       Add bacon to pot, and brown

-       Add onion to pot, and cook until bacon is crisp, about 8 minutes

-       Add chopped swiss chard stems to pot, and cook for 5-7 minutes

-       Add minced garlic, and cook until fragrant

-       Add Swiss chard leaves to bacon mixture, and cook until the leaves have wilted, about 10 minutes

-       Season with salt and pepper to taste

  • 5 Yukon gold potatoes, peeled and quartered
  • 4 tablespoons of organic butter
  • 1 tablespoon blue cheese crumbles
  • 1 teaspoon salt, plus more for seasoning
  • 1 teaspoon black pepper, plus more for seasoning
  • 2 bunches of rainbow swiss chard, stems removed and chopped
  • ½ cup thick-cut apple wood smoked bacon, chopped
  • 2 tablespoons chopped onion
  • 1 tablespoon grapeseed oil
  • 1 tablespoon fresh garlic, minced
  • Salt and pepper to taste

Method For Short Ribs

-      In a Dutch oven, heat 3 tablespoons of olive oil

-      Rub sugar and ¼ cup of garlic into ribs, and season with mustard powder, salt, pepper and oil

-      Place short ribs in the bottom of the Dutch oven

-      Sear short ribs on each side, and then remove from heat

-      In the same Dutch oven, add celery, onion and bay leaf

-      Add in 1 tablespoon of garlic

-      Add in diced and stewed tomatoes

-      Add in beer

-      Add short ribs back to Dutch oven, and cover with beef broth

-      Sprinkle with parsley

-      Let simmer on low heat for 2½ to 3 hours

Mashed Potatoes

Ingredients

·      4 potatoes, diced

·      2 tablespoons blue cheese

·      1 tablespoon olive oil-butter blend

·      1 teaspoon parsley

·      1 teaspoon pepper

Method

-      Boil potatoes until fork tender

-      Remove potatoes from water, and add butter blend

-      Using a fork, mash potatoes

-      Stir in blue cheese, parsley and pepper

  • 3 cups low-sodium beef broth
  • 1 cup stewed tomatoes
  • 1 cup craft beer
  • ½ cup chopped celery
  • ½ cup chopped onion
  • ¼ cup plus 1 tablespoon minced garlic
  • ¼ cup brown sugar
  • ¼ cup olive oil
  • 1 tomato, diced
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 teaspoons mustard powder
  • 2 teaspoons parsley
  • 1 bay leaf
  • 4 potatoes, diced
  • 2 tablespoons blue cheese
  • 1 tablespoon olive oil-butter blend
  • 1 teaspoon parsley
  • 1 teaspoon pepper
