Mardi Gras

Instructions

WHAT TO GET

cake

1 box yellow cake mix

3 eggs, beaten

1 cup water

⅓ cup vegetable oil

1 teaspoon cinnamon

1 teaspoon nutmeg

filling

½  stick melted butter

⅓ cup brown sugar

1 teaspoon vanilla

Icing

8 ounces room temperature reduced fat cream cheese

1 cup powdered sugar

1 teaspoon vanilla

sprinkles for garnish

WHAT TO DO

Cake

1.    preheat oven to 350 degrees

2.   with mixer, combine box mix, nutmeg and cinnamon

3.   In separate bowl whisk eggs, water and oil

4.   while mixer is on slow speed, slowly pour in wet ingredients

5.    once incorporated, bring speed to medium-high and mix until completely smooth

6.   in muffin foil placed in muffin pan, fill each individual foil ¾ to the brim

7.   spoon on 2 tablespoons of filling center of mix directly on top raw cake mix

8.   bake in oven for 18-21 minutes, or until center is cooked

filling

1.    bring butter, sugar and vanilla to high heat and whisk until sugar is almost dissolved (about 3 minutes)

2.   remove mixture from heat

icing

1.    in mixer, bring cream cheese to whipped consistency

2.   on a slower speed, slowly incorporate sugar and vanilla until smooth

Presentation

1.    top muffins with icing, smoothing with spatula

2.   apply sprinkles on top cupcakes, rotating cupcakes on an angle to apply sprinkles on sides
