Instructions

TOAST BUN ON FLAT TOP.  COOK BURGER TO DESIRED TEMP.  TOP WITH CHEESE, SPICY MAYO, JALAPENOS, GRILLED ONIONS, SLICED TOMATO, & LEAF LETTUCE.  

Ingredients
  • Bun – 1 EA
  • Burger – 1 EA
  • Habanero Cheddar Cheese – 1 EA
  • Grilled Onions – 2 Oz
  • Sliced Tomato – 1 EA
  • Leaf Lettuce – 1 EA
  • Jalapenos – 1 Oz
  • Spicy Mayo – 1 Oz

Method

-      Combine all ingredients in a bowl and whisk together until blended

Ingredients
  • 1 cup extra virgin olive oil
  • 1/3 cup white wine vinegar
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 tablespoon minced fresh garlic
  • 1 tablespoon chopped parsley or cilantro
  • ¼ teaspoon lime zest
  • Juice from ½ a lime
  • Salt and pepper to taste

Method For Steak

-       Generously season steak with salt, cayenne spice and pepper. Pack seasoning into the meat using your fingers, and coat steaks in oil

-       Place the steak on a hot grill and cook for 4 minutes on each side for medium-rare to medium or 5 minutes on each side for medium-well to well

-       Drizzle steaks with jalapeno steak sauce

Method for Jalapeno Sauce

-       In a small skillet, heat balsamic vinegar over low heat

-       Add the jalapenos and let steep for 5 minutes until the balsamic vinegar reduces and has a smooth and thick consistency

-       Strain the jalapenos from the sauce

Ingredients
  • 3 8 oz. petite filets with bone
  • 3 tablespoons grapeseed oil
  • Salt, cayenne spice and pepper to taste
  • ½ cup of balsamic vinegar
  • 2 tablespoons of jalapeno peppers, seeded and chopped

Method

-      Mix dry ingredients together, and add a pinch of pepper

-      In a stand mixer or using a hand-held mixer set to low speed, stir in butter, milk, jalapenos and thyme

-      Pour batter into a buttered cast iron skillet, and bake at 375-degrees for 20 minutes

  • 3 cups all-purpose flour
  • 2 cups milk
  • 1 cup sugar
  • 1 cup cornmeal
  • ¾ cups butter, melted
  • 2 tablespoons chopped jalapeno peppers
  • 2 teaspoons thyme
  • Pinch of pepper
