Ingredients

·      3 cups chickpea puree

·      2 tablespoons olive oil

·      1 tablespoon fresh garlic

·      1 cup roasted red bell peppers

·      1 teaspoon black pepper

·      1 teaspoon salt

·      ½ tablespoon parsley

 

 

Method

-Mix together chickpea puree and olive oil

-Stir in garlic and bell peppers

-Season with salt and pepper

-Top with parsley and serve with a sliced baguette

Instructions

Method

-      Place all the ingredients into a food processor and pure until smooth and consistency is smooth enough for dipping

-      Use the olive oil to adjust the thickness of the hummus, if too thick, add more water, if too thin, add more olive oil

-      Adjust the seasonings and serve with warm toasted pita bread or carrots and celery

  • ¼ cup tahini
  • ½ cup lemon juice
  • ½ teaspoon minced garlic
  • 2 tablespoons toasted pine nuts
  • 2 tablespoons parsley
  • 2-3 tablespoons water
  • 1/3 cup olive oil
  • Whole wheat pita bread
