Method:

Place the peaches, vanilla yogurt, almond milk and ice cubes into a blender and puree until smooth, and serve immediately.

-       Toss string chicken with olive oil and cayenne pepper

-       Scramble two egg whites in a skillet on medium heat

-       Layer bagel with cheese, egg whites, tomato slices, avocado, and string chicken

-Toss carrots and broccoli in mixture

-Season with salt and pepper and serve

Ginger Vinaigrette Method

-      In a blender, combine ginger, onion, celery, lemon juice, ketchup, soy sauce and cilantro

-      While blending, thicken with olive oil as needed

-      Serve over mixed greens

 

 

Hot and Spicy Rock Shrimp Method

-      Marinate rock shrimp with 1 teaspoon of olive oil, 1 teaspoon of ginger, 1 teaspoon of hoisin sauce

-      Heat 2 tablespoons canola oil in a wok, and add sesame seed oil

-      Add sliced jalapenos and rock shrimp to wok

-      Toss with hoisin sauce and soy sauce

-      Add green onion, lime juice and garlic, and toss

-      Add bean sprouts

-      Add two tablespoons peanuts

-      Top with black and white sesame seeds

  • 1/3 cup bean sprouts
  • 2 tablespoons canola oil
  • 2 tablespoon green onion
  • 2 tablespoons peanuts
  • 2 tablespoons red jalapeno peppers, sliced
  • 1 tablespoon lime juice
  • 1 tablespoon minced garlic
  • 2 teaspoons hoisin sauce
  • 2 teaspoons sesame seed oil
  • 1 teaspoon black sesame seeds
  • 1 teaspoon white sesame seeds
  • 1 teaspoon olive oil

Grilled Chicken Salad

 

Method

-       Coat chicken breasts with olive oil, salt, and pepper

-       Chop chicken breasts and set aside

-       Heat 2 tablespoons of olive oil in a cast iron skillet over medium-high heat and cook chicken 2 to 4 minutes per side

-       In a mixing bowl add, Romaine lettuce, iceberg lettuce, red onion, corn, scallion, black eye peas, cherry tomato, Monterey jack cheese and grilled chicken and toss together

-       Top with Parmigiano Reggiano and crushed corn tortilla chips

-       Serve with Creamy Avocado Dressing (see below)

 

 

Creamy Avocado Dressing

 

Method

-       Add all ingredients into blender

-       Blend for 1 minute or until a creamy consistency

-       Serve with Grilled Chicken Salad (see above)

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 head chopped Romaine lettuce
  • ½ head chopped iceberg lettuce
  • ¼ red onion, thinly sliced
  • ½ cup of fresh corn
  • 1/3 cup black eyed peas
  • 1 cup halved cherry tomato
  • 1 chopped scallion
  • ¼ cup shredded Monterey jack cheese
  • 2 tablespoons shredded Parmigiano Reggiano cheese
  • ¼ cup crushed corn tortilla chips

  • 1 peeled and halved avocado
  • 1 chopped scallion
  • 1 chopped jalapeno
  • Juice from 1 lime
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 cup Greek yogurt
  • 1 tablespoon minced garlic
  • 2 cups chopped cilantro
  • 1 tablespoon Crystal hot sauce
  • Salt and pepper to taste
