Deviled Eggs

The Back Story


·      2 whole eggs, boiled and sliced in half (discard yolks)

·      3 tablespoons mayonnaise

·      1 tablespoon yellow mustard

·      1 celery rib, diced

·      2 tablespoons red onion, minced

·      ½ jalapeno, minced

·      4 whole cooked egg whites, chopped

·      3 tablespoons oxtail meat

·      Garnish with chives



-      Mix together eggs whites, mayonnaise, mustard, celery, red onion, jalapeno pepper, and salt and pepper to taste

-      Spoon into boiled egg shells

-      Top with oxtail meat
