-       In a cast iron skillet heat olive oil over medium-high heat

-       Add shallots, garlic and sauté for 1 to 2 minutes

-       Add butter, carrots and caramelize for 2 to 3 minutes

-       Add sugar, honey over carrots basting and sautéing for 2 to 3 minutes and serve

  • 1 bunch petite heirloom carrots
  • 3 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced shallots
  • 1 tablespoon sugar
  • 1 tablespoon organic honey
  • 2 tablespoons unsalted organic butter
