The Back Story

Minestrone Soup


·      4 cups chicken or vegetable stock

·      1 12-ounce can cannellini beans

·      1 cup stewed tomatoes

·      1 cup pulled chicken

·      1 cup chopped mushrooms

·      ¼ pound whole wheat pasta

·      2 celery stalks, chopped

·      2 carrots, chopped

·      1 onion, diced

·      ½ head cabbage, chopped

·      1 tablespoon minced garlic

·      1 teaspoon parsley

·      ¼ teaspoon chili flakes

·      1 bay leaf


-      In a pot, add celery, carrots, onion, mushrooms, garlic, chili flakes and a bay leaf, and cook down

-      Stir in chicken or vegetable stock, and cook

-      Add in pasta

-      Add in stewed tomatoes

-      Add in parsley

-      Add in beans

-      Add in chicken

-      Add in cabbage

-      Serve topped with Parmesan cheese
