The Back Story

Thai Fried Rice with Marinated Chicken


·      2 chicken legs, skinless

·      2 chicken thighs, skinless

·      1 tablespoon fish sauce

·      2 tablespoons cilantro

·      ½ cup coconut milk

·      1 inch ginger, peeled and minced

·      2 garlic cloves, sliced

·      3 Thai chili

·      2 tablespoons duck fat


-      Place the chicken into a gallon size Ziploc bag

-      Add the fish sauce, coconut milk, ginger, garlic, Thai chilies into the bag and mix well and let marinade for 12 hours

-      Take the marinated chicken out of the bag and place into a hot skillet with 2 tablespoons of duck fat

-      Brown the chicken pieces for about 5 minutes and then place into the oven at 375 degrees for about 20 minutes or until the chicken is cooked through
