Smoked Cornish Hen

The Back Story

Method

-Coat Cornish hen with salt, pepper, cumin, and 2 tablespoons olive oil

- Heat remaining olive oil in a pan and place the chicken in oil

- Add the sliced onions to the pan and squeeze half the lime juice over the hen

- Sear the hen on both sides for 3 minutes each

- Place the hen into a smoker for about 2 hours

- If you don’t have a smoker, place into a 400-degree oven for about one hour

- Take out the hen and serve with the pico de gallo, rice and beans
