Seafood Salad

The Back Story

Ingredients

·      5 ounces crab meat

·      4 cups mixed greens

·      ¼ cup halved cherry tomatoes

·      1 cup cherry tomatoes

·      1 granny smith apple, sliced

·      ½ red onion, sliced

·      2 tablespoons olive-oil butter

·      2 tablespoons pecans

·      2 tablespoons shredded cheese

·      2 tablespoons balsamic vinaigrette

·      2 tablespoons corn

·      1 teaspoon smoked paprika

 

Method

-      In a skillet over medium heat, melt olive-oil butter

-      Add crabmeat to hot skillet

-      Season crabmeat with salt and pepper to taste

-      Combine remaining ingredients to create a salad

-      Toss crabmeat into salad

-      Toss with balsamic vinaigrette
