The Peacemaker Sandwich

The Back Story

Visit the Southside Cafe in New Orleans to try the Peacemaker Sandwich. 

Ingredients

·      1 pound crawfish tails, cooked

·      ½ cup dry cornbread

·      2 tablespoons light mayonnaise

·      1 tablespoon remoulade

·      1 tablespoon barbeque sauce

·      2 eggs

·      1 teaspoon Cajun seasoning

·      Salt and pepper to taste

·      2 tablespoons melted butter

·      3 slices of tomato

·      ½ cup shredded lettuce

·      1 loaf French bread, sliced

Method

-      Take the crawfish tails and place in a bowl

-      Add the dry cornbread , mayonnaise, remoulade, bbq sauce, 2 eggs and seasonings

-      Mix the crawfish mixture until everything is incorporated well

-      If the mixture is too dry add more mayonnaise, if the mixture is too wet add more cornbread

-      Form the crawfish mixture into a patty the same size as your bread

-      Heat up a skillet or grill pan with 2 tbs of melted butter and start searing your crawfish patty

-      Flip over the patty after it has cooked for 3-4 minutes and cook on the other side for another 3 to 4 minutes

-      Spread some mayonnaise on the sliced loaf of bread and garnish with tomatoes, lettuce and pickles, then top with the crawfish patty

-      Drizzle some barbeque sauce on top of the patty if you like

-      Place the top of the loaf on and enjoy
