Ginger Carrot Soup

The Back Story



·      1 pound chopped, pre-boiled carrots

·      2-3 cups chicken stock

·      1 tablespoons olive oil

·      1 tablespoon butter

·      ½ cup chopped white onion

·      ½ tablespoon chopped ginger

·      1 ½ teaspoons minced garlic




-Boil carrots in chicken stock for 3-5 minutes

-Mix together olive oil and butter and add to a skillet

-Add onion, ginger, and garlic to the skillet and sauté

-Add all ingredients to a blender and puree until smooth
