The Back Story

Carrot Ginger Salad

·      4 peeled carrots, shaved thin

·      1 tbs ginger, minced

·      ½ tsp fish sauce

·      1 tbs sugar

·      2 tbs water

·      1 garlic clove, minced

·      ½ tsp sesame oil

Method

-      Mix the ginger, fish sauce, sugar, water, garlic and sesame oil together in a bowl and whisk

-      Drizzle the dressing over the shaved carrots and toss until carrots are coated

-      Serve cold
