Vodka Cream Farfalle

Method

-      Heat oil in skillet over medium heat

-      Add onion and shrimp to skillet

-      Add vodka to skillet

-      Add garlic powder, parsley and a ½ cup of cream to skillet, and let simmer

-      In another skillet, heat two tablespoons of oil

-      Add chopped eggplant to skillet

-      Add minced garlic to skillet

-      Add basil to skillet

-      Add a dash of vodka to skillet

-      Combine eggplant mixture and shrimp mixture

-      Stir in ¼ cup of cream

-      Stir in cooked bow-tie pasta

  • ½ pound shrimp
  • 2 cups bow-tie pasta
  • 1 cup chopped eggplant
  • ¾ cup cream
  • ½ cup diced tomato
  • ¼ cup diced onion
  • ¼ cup chopped parsley
  • ¼ cup vodka
  • 2 tablespoons freshly chopped basil
  • 1 tablespoon minced garlic
  • Salt and pepper to taste
  • Garlic powder to taste
