Vegetable Po’Boy

Instructions

Method

-      Grill zucchini, eggplant, red onion, and garlic in 2 tablespoons of olive oil

-      Toast multigrain bread in a frying pan in remaining olive oil

-      Spread Dijon and pepper jelly on toast

-      Layer vegetables as desired and serve

Ingredients
  • Multigrain bread
  • 1 Zucchini, sliced and grilled
  • 1 eggplant, sliced and grilled
  • 1 tablespoon spicy pepper jelly
  • 4 tablespoons olive oil
  • 1 tablespoon diced red onion
  • 1 teaspoon minced garlic
  • 1 teaspoon Dijon
  • 1 teaspoon agave
