-      Place the chicken into a gallon size Ziploc bag

-      Add the fish sauce, coconut milk, ginger, garlic, Thai chilies into the bag and mix well and let marinade for 12 hours

-      Take the marinated chicken out of the bag and place into a hot skillet with 2 tablespoons of duck fat

-      Brown the chicken pieces for about 5 minutes and then place into the oven at 375 degrees for about 20 minutes or until the chicken is cooked through


  • 2 chicken legs, skinless
  • 2 chicken thighs, skinless
  • 1 tablespoon fish sauce
  • 2 tablespoons cilantro
  • ½ cup coconut milk
  • 1 inch ginger, peeled and minced
  • 2 garlic cloves, sliced
  • 3 Thai chili
  • 2 tablespoons duck fat
