Instructions

Method

-      Place the yogurt, blue cheese, buttermilk and apple cider in a bowl

-      Mix everything together

-      Add more buttermilk if dressing is too thick, adjust with more Greek yogurt if it is too thin

-      Add the salt, pepper, and Cajun spice to taste

-      Mix well

-      Mix the lettuce and tomato along with the pulled chicken pieces in a bowl

Ingredients
  • 8 ounces fried chicken, shredded
  • ½ iceberg lettuce, cubed into 1 inch
  • 2 cups spring mix
  • 1 Roma tomato, cubed
  • 1 avocado, peeled and cubed
  • 2 tablespoons low fat buttermilk
  • ¾ cup blue cheese crumbles
  • ½ cup non-fat Greek Yogurt
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Cajun spice
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup cornbread crouton
