Instructions

WHAT TO DO

1.    Bring olive oil to high heat

2.   saute onion, chicken sausage, and garlic

3.   after slightly seared sausage incorporate parsley, okra, tomatoes, salt, pepper. bring ingredients to high heat then top nest of pasta

4.   in a new teflon pan, bring olive oil to medium-high heat

5.    crack 2 eggs into pan until done over-easy

6.   top pasta with fried egg

7.   grate parmesan on top arranged plate

8.   season to taste

Ingredients
  • 8 ounces whole wheat spaghetti pasta
  • 2 large eggs
  • ¾ cup grated parmesan
  • ½ cup small diced red onions
  • 1 pound chicken smoked sausage, diced small
  • 4 cloves minced garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons packed parsley leaves
  • 1 loaf french bread
  • 8 heirloom cherry tomatoes, halved
  • ⅓ cup sliced okra
  • 2 tablespoons olive oil
