Smoked Cornish Hen



-Coat Cornish hen with salt, pepper, cumin, and 2 tablespoons olive oil

- Heat remaining olive oil in a pan and place the chicken in oil

- Add the sliced onions to the pan and squeeze half the lime juice over the hen

- Sear the hen on both sides for 3 minutes each

- Place the hen into a smoker for about 2 hours

- If you don’t have a smoker, place into a 400-degree oven for about one hour

- Take out the hen and serve with the pico de gallo, rice and beans


  • 1 Cornish hen
  • 5 tablespoon olive oil
  • 4 teaspoons cumin
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • ½ sliced white onion
  • 1 lime sliced in half
  • 4 sprigs of thyme


I loved the sound of this recipe, and like that Chef Jeff makes accomodations in his recipes, like saying chicken breasts could be substituted, or suggesting using the oven, if no smoker available. His recipes are simple, and healthy and sound delicious.
