Instructions

Roasted Chicken with Oyster Stuffing

Roasted Chicken Ingredients

·      2 quartered chicken pieces

·      Oil, salt and pepper to taste

Method

-      Pull skin back from meat to create a pocket, and season with oil, salt and pepper

-      Bake in oven for 40 to 45 minutes

Oyster Stuffing Ingredients

·      1½ pint small oysters, drained and chopped

·      8 cups dried corn bread

·      ¼ cup yellow onions, chopped

·      ¼ cup green bell pepper, chopped

·      ¼ cup celery, chopped

·      2 eggs, beaten

·      2 tablespoons olive oil

·      1 tablespoon olive oil butter blend

·      1 tablespoon crumbled poultry seasoning

·      1 teaspoon fresh sage

·      Salt and black pepper to taste

Method

-      Heat oil in a skillet, and sauté onions, bell peppers and celery

-      Sprinkle poultry seasoning over vegetables, and stir

-      Add fresh sage and olive oil butter blend to skillet, and stir

-      Add oysters to skillet

-      Add salt and pepper to taste

-      Remove from heat to a bowl

-      Stir in breadcrumbs and eggs

-      Put mixture into a baking dish, and bake for 45 minutes

Garlic Spinach

Ingredients

·      2 cups spinach

·      2 tablespoons olive oil

·      ½ tablespoon minced garlic

·      1 teaspoon olive oil butter blend

Method

-      Heat oil in a cast iron skillet

-      Add in garlic

-      Stir in butter blend

-      Add in spinach, stir and cook until wilted

-      Season with salt and pepper to taste

I have not been able to find out how Mother made Oyster Dressing, it was so moist. I tried a recipe and it was like oyster cornbread and heavy and dry. Can I substitute bread instead of corn bread or bread crumbs and use your ingredients? She used chicken broth and I thought she had lost her mind. Chicken broth with oysters?? It is one of the cases where I did not take home ec and Mother did not write out her recipes.I don't cook and so I don't understand your directions. I can't find where you say what to set the oven on.
