Instructions

WHAT TO DO

1. Bring Riesling, sugar, vanilla bean, cinnamon, nutmeg and water to a boil in a 3 to 4-quart saucepan over high heat. Reduce heat to medium; add peaches, and let simmer 8-10 minutes or to desired of tenderness.

2. Transfer peaches to individual serving dishes, using a slotted spoon. Add grapes to wine mixture, and simmer 3 minutes. Transfer grapes to dish with peaches, using a slotted spoon.

3. Increase heat to high, and cook wine mixture about 10 minutes or until reduced to about ¾ cup. Spoon mixture over peaches and grapes. (Optional).

4. Place cream and sugar in a mixer on medium-high speed. Whip cream until soft peaks form. Add a dollop of whipped cream (or substitute with Greek yogurt) atop each peach dessert and serve. Garnish with mint top.

  • 2 c. sweet Riesling wine
  • 1/3 c. sugar
  • 1 vanilla bean, split lengthwise
  • 1 tsp. cinnamon, freshly grated
  • 1 tsp. nutmeg, freshly grated
  • 1 c. water
  • 6 medium-sized firm, ripe peaches, peeled, halved and cut into wedges
  • 2 c. fresh grapes, sliced lengthwise
  • 1 tsp. cinnamon, freshly grated
  • 1 tsp. nutmeg, freshly grated
  • 1 c. heavy whipping cream
  • 2 tsp. sugar
  • 4 fresh mint tops
