Instructions

Mix together salt and sugar in a bowl. Layer lemon slices in a separate bowl and sprinkle salt and sugar mixture on top until lightly covered. Then, add sprigs of thyme and toss mixture. Finally, layer lemons, the rest of the mixture, and thyme inside a mason jar and seal for 24-hours.

  • 1/2 cup organic white sugar
  • 1/2 cup kosher salt
  • 1 bunch thyme
