Instructions

Method

- Roughly chop the tomatoes, white onion and cilantro

- Toss together in a bowl and season with salt and pepper

- Garnish with sliced avocado

- Serve alongside beans and Cornish Hen

  • 1 chopped Creole tomato
  • ½ chopped white onion
  • 2 tablespoons chopped cilantro
  • 1 tablespoon olive oil
  • ½ sliced avocado
  • salt and pepper to taste
  • 1 Jalapeno (Optional)
