Oxtail Deviled Eggs

Instructions

Method

-      Mix together eggs whites, mayonnaise, mustard, celery, red onion, jalapeno pepper, and salt and pepper to taste

-      Spoon into boiled egg shells

-      Top with oxtail meat

Ingredients
  • 2 whole eggs, boiled and sliced in half (discard yolks)
  • 3 tablespoons mayonnaise
  • 1 tablespoon yellow mustard
  • 1 celery rib, diced
  • 2 tablespoons red onion, minced
  • ½ jalapeno, minced
  • 4 whole cooked egg whites, chopped
  • 3 tablespoons oxtail meat
  • Garnish with chives
