Oven Fried Pork Chop

Ingredients

·      2 center-cut bone-in pork chops

·      2 cups baked BBQ chips, crushed

·      1 cup flour

·      5 eggs

·      2 tablespoons parsley, chopped

·      3 teaspoons Cayenne pepper

·      Salt and pepper to taste

Method

-      Season pork chop with salt, pepper and 2 teaspoons of Cayenne pepper

-      Whisk eggs together with salt, pepper and 1 teaspoon of Cayenne pepper

-      Place egg mixture, flour and crushed chips in three separate containers

-      Coat pork chop in flour mixture, then egg mixture and finally chip mixture

-      Place pork chop in cast iron skillet, and bake in 350-degree oven for 25 to 30 minutes

Low-Fat Mac and Cheese

Ingredients

·      1 pound whole wheat pasta, par-cooked

·      2 cups reduced-fat Swiss cheese, shredded

·      2 cups reduced-fat cheddar cheese, shredded

·      2 cups almond milk

·      1 cup smoked gouda, shredded

·      ½ cup Greek yogurt

·      1 onion, small diced

·      1 bay leaf

·      2 tablespoons olive oil

·      2 tablespoons crabmeat

·      1 tablespoon chopped scallions

·      1 tablespoon minced garlic

Method

-      In a pot, heat olive oil and add onion

-      Add bay leaf and garlic to pot

-      Add almond milk to pot

-      Add grated cheese to pot, and melt

-      Add Greek yogurt to pot

-      Add whole wheat par-cooked noodles to pot

-      Add chopped parsley and scallions, and stir

-      Once noodles are cooked through, remove from heat

-      Stir in crab meat, and serve
