New York Strip Steak with Spiced Chocolate Sauce



-      Season steak with salt, pepper and Cajun seasoning

-      Heat olive oil in cast iron skillet

-      Add thyme sprigs to skillet

-      Add steak on top of thyme, and sear on each side

-      Transfer steak to clean cast iron skillet, and roast in a 350-degree oven for 10-15 minutes

-      In the skillet used to sear the steak, melt olive-oil butter blend

-      Add shallots to skillet

-      Deglaze the skillet with red wine

-      Add chicken stock

-      Add pinch of salt and pepper

-      Add cayenne pepper truffles

-      Add carrots

-      Drizzle sauce over cooked steak

  • 1 16-ounce New York strip steak
  • ¾ cup chicken stock
  • 1/3 cup red wine
  • ½ cup diced heirloom carrots
  • 6 sprigs of thyme
  • 2 shallots, diced
  • 2 cayenne chocolate truffles
  • 2 tablespoons olive oil-butter blend
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
