Mac & Cheese with Smoked Shrimp

Instructions

Method

-       Drain the applewood chips and place in stove top smoker over medium-high heat

-       Add shrimp, salt, pepper, 2 tablespoons olive oil, Cajun seasoning and parsley in a bowl and mix together

-       Place in stove top smoker and smoke for 5 minutes and set aside

-       Heat remaining olive oil in a medium pot over medium-high heat

-       Add yellow onion, garlic and sauté for 1 to 2 minutes

-       Add ½ cup of half and half and simmer for 1 minute

-       Add rigatoni pasta, gouda, cheddar and jalapeno Monterey jack cheeses to pot and start to mix

-       Add Crystal hot sauce, pinch of black pepper, remaining half and half, scallions, smoked jalapenos, cilantro

-       Mix well together until cheese has melted for 2 to 3 minutes and serve topped with Smoked Shrimp and Parmigiano Reggiano

  • 5 tablespoons olive oil
  • 2 jalapenos
  • 1 pinch Cajun seasoning
  • ½ pound large shrimp
  • 1 tablespoon chopped parsley
  • 1 pound premade rigatoni pasta
  • 2 minced garlic cloves
  • ¼ chopped yellow onion
  • 2 tablespoons chopped scallions
  • 2 tablespoons chopped cilantro
  • 1 cup half and half
  • ½ cup shredded smoked gouda
  • ½ cup shredded cheddar cheese
  • 1 cup shredded jalapeno Monterey Jack cheese
  • 1 dash Crystal hot sauce
  • Shredded Parmagiano Reggiano to taste

Chef Jeff, My grand daughter Emma was on the episode you recorded Saturday May 16,2015 at carowinds. We really enjoyed ourselves. Fans forever!! I'm very interested in the recipe for Mac n cheese with shrimp. I searched the recipe on your website and was unable to find that Episodes particular recipe. This recipe contained 3 types of cheese, smoked shrimp, onions, Garlic, half n half, noodles, salt, pepper , herbs . Could you please help me find the recipe that was recorded Saturday may 16, 2015 ?
