Mac and Cheese With Crawfish



- In a medium saucepan bring 3 tablespoons of butter to melt

- Add the garlic and onions and cook for about 5 minutes

- Add the flour and combine with the onions and garlic

- Slowly ladle in the crawfish stock

- Add the light cream all while mixing with wooden spoon under low heat

- When sauce has thickened, should take about 10-15 minutes, slowly add cheese

- Add cooked crawfish tails and scallions and mix

- Season to taste with salt and pepper

- Pour cheese sauce over ½ pound of cooked whole wheat pasta and adjust seasonings

  • ½ pound cooked whole wheat pasta shells
  • 8 ounces cleaned crawfish tails, smoked
  • 3 tablespoon butter
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped onions
  • ½ tablespoon all purpose flour
  • ½ cup crawfish stock
  • 1/3 cup light cream
  • 1/3 cup grated smoked gouda
  • ½ cup smoked cheddar cheese
  • Tablespoon sliced scallions
