Leftover Red Bean Soup

Instructions

WHAT TO DO

1.    heat olive oil to high heat in large dutch oven

2.   Add vegetables, bones and seasoning

3.   when onions and sausage brown, add butter, beans, bay leaf, rosemary, and chicken stock

4.   when soup comes to boil, remove bones and immersion blend until smooth

5.    In separate high-heated skillet, add sausage and cook until browned and slightly charred then add to finished soup

6.   add minced parsley to soup before serving

Ingredients
  • 1 link smoked chicken andouille sausage, medium diced
  • ⅓ cup yellow onion, small diced
  • ⅓ cup green bell pepper, small diced
  • ⅓ cup sauteed trinity
  • 1 tablespoon butter
  • 3 cloves roasted garlic
  • salt and pepper to taste
  • 2 teaspoons creole seasoning
  • 1 pound marrow bones
  • 1 bay leaf
  • 1 tablespoon fresh rosemary, minced
  • 1 cup chicken stock
  • 2 tablespoons olive oil
  • 1 large can creole style red beans or 1 quart leftover red beans
  • ⅓ bunch minced parsley
