Latin Meat Loaf with Guacamole

Instructions

Latin Meat Loaf 

What You Need

1½ lbs. lean ground beef

2 tablespoons Worcestershire sauce

1 medium red onion, chopped finely

2 tablespoons fresh garlic, chopped

1/3 cup tomato paste

1 packet taco seasoning

½ teaspoon chili powder

1 small can black beans, rinsed and drained

2 jalapeños peppers, seeded and minced (reserve 1/2 tablespoon for garnish)

½ cup breadcrumbs

1 egg, beaten lightly

½ cup grated cheddar cheese

½ cup Mexican cheese

6 cilantro sprigs

1 bag corn chips

Guacamole (see recipe)

What To Do

1. Preheat the oven top 375 degrees.

2. Place ground beef, Worcestershire sauce, onion, garlic, tomato paste, taco seasoning, chili powder, beans, breadcrumbs and egg in a large bowl. Using hand, mix thoroughly to combine. Oil loaf pan. Pack meat mixture firmly into the pan.

3. Bake meatloaf uncovered for about 45 minutes or until cooked through. Remove from oven and let rest for 5 minutes. Turn meatloaf out onto the prepared tray or wire baking rack. Garnish with cheeses and cilantro. Serve with corn chips and guacamole.

Homemade Guacamole

What You Need

2 large ripe avocados, peeled and pitted
juice from ½ lime
6 cilantro sprigs, chopped
½ red onion, finely diced

2 tablespoons tomatoes, diced
½ jalapeno, seeded and finely chopped
Kosher salt and fresh black pepper to taste

What To Do

1.    In a small bowl, mash avocados with lime juice.

2.   Add cilantro, onions, tomatoes and jalapenos. Stir to combine all ingredients. Season with salt and pepper to taste.
