Key Lime Pie

Graham Cracker Crust Ingredients

1 & 3/4 cups graham cracker crumbs

2-3 tablespoons sugar

Pinch of sea salt

3-4 tablespoons of melted butter

1/4 cup heavy cream

Method

-      Mix all these ingredients together and press into your pie pan

-      Bake at 350 for seven minutes

Filling Ingredients

·      ½ cup fresh squeezed lime juice (key limes traditionally)

·      5 extra large egg yolks

·      1 can of sweetened condensed milk

Method

-      Mix these ingredients together and pour into your par baked crust

-      Bake at 375 for 12-15 minutes, then check for doneness

-      The center should be completely set with a slight jiggle when shaken

-      Adjust your time and temperature as needed based on your altitude and oven

-      Allow to cool to room temperature and refrigerate until ready to serve. This pie can also be made ahead of time and frozen

Pro tip: for an extra kick, use a micro plane to zest 1-2 limes and add this zest to your crust and/ or filling for and extra citrus pop!
