Homemade Applesauce Cake

Instructions

WHAT YOU NEED

2 ½ c. all-purpose flour

1 c. granulated sugar

¾ c. brown sugar

1 tsp. baking powder

1 tsp. baking soda

¾ tsp. cinnamon

2 tsp. pumpkin pie spice

1 tsp. vanilla extract

½ c. butter-flavored Crisco

1 c. applesauce

1 c. buttermilk

½ c. chopped walnuts

½ c. raisins

 

For: Chocolate Ganache Icing

16 oz. of semi sweet chocolate chips

 

16 oz. heavy cream

 

WHAT TO DO

For Applesauce Cake

1.    Preheat oven to 350 degrees. Grease and flour two 8-inch cake pans.  Combine all ingredients into a mixing bowl except walnuts and raisins.  Mix on low speed for 1 minute.  Beat at medium speed for 3 minutes, scraping sides of bowl as you mix.

2.    Fold in walnuts and raisins.  Distribute into prepared cake pans.  Bake for about 25 minutes, or until center springs back when touched lightly. After 10 minutes, remove cake from pan and allow to cool.

3.    Frost cake with Chocolate Ganache Icing. Place walnuts along the edge of cake to form a circle. For the center make an A with raisins, if desired.

 

For: Chocolate Ganache Icing

1.    Place chocolate chips into a bowl. Pour cream into a saucepan over medium high heat; bring cream to a boil.

2.    Remove pan from heat and pour cream over chocolate chips. Let chocolate sit for about 2 minutes; stir to combine. Let icing sit for 5 minutes then pour over cake.
