Grilled Chicken Breast with Saffron Rice

Grilled Chicken Ingredients

·      2 chicken breast, boneless and skinless

·      2 tablespoons olive oil

·      2 garlic cloves, minced

·      Salt and pepper to taste

Method

-      Season the chicken breast with garlic, olive oil, salt and pepper

-      Place the chicken breast on a hot grill pan and cook for 6 minutes on each side until the juices run clear

Dog Version: Use the same method, but omit the seasonings and oil

Saffron Rice Ingredients

·      1 cup white rice

·      2 cups chicken stock

·      ¼ teaspoon saffron

·      2 tablespoons olive oil-butter blend

·      Salt and pepper to taste

Method

-      Melt the olive oil-butter blend in a small pot over medium heat

-      Add the rice and coat with the butter for 2 to 3 minutes until toasted and fragrant

-      Add the chicken stock, saffron and seasoning

-      Place the top on the pot and reduce the heat to low and cook for 20 minutes until the rice is cooked through

*Dog version: Use the same method, but omit the oil and the seasonings
