Grilled cheese with Smoked oysters



-      Season the oysters with Cajun spice and smoke the oysters in a stovetop smoker for 7 to 10 minutes

-      Place the bread in a skillet with some duck fat and toast the bread until crispy

-      Place the cheese on the toasted bread and top with cheese

-      Melt the cheese with a blowtorch or place in a toaster oven

-      Add the rest of the toppings and finally place the smoked oysters in and serve immediately  

  • 12 oysters, season with Cajun spices
  • 2 tablespoons duckfat
  • 4 slices swiss cheese, reduced fat
  • 4 slices multigrain bread
  • 2 tablespoons parsley
  • 1 teaspoon cayenne
  • 1 avocado
  • ½ red onion
  • 1 teaspoon orange marmalade
