Gnocchi With Mushroom “Bacon”

Recipe Provided by Commander’s Palace

Ingredients

·       1 pound Crimini Mushrooms, quartered

·       1 cup Light Brown Sugar

·       2 tablespoons Kosher Salt

·       1 tablespoon Red Chili Flakes

·       1 cup White Wine

Method

-      Mix all ingredients together, let stand overnight in refrigerator. Smoke at 250’ for 2 hours

-      Reserve

For the Dish

·       1 pound Fresh Gnocchi, blanched

·       2 large Shallots, minced

·       1 quart Heavy Cream

·       1 ½ cups freshly grated Pecorino Romano

·       2 tablespoons softened Unsalted Butter

·       ½ tablespoon each, freshly chopped, Basil, Thyme, Chives, Parsley 

·       3 ounces Brandy

·       Salt, White Pepper

Method

-      Place a large sauté pan over medium high heat- melt the butter

-      Add the shallots, cook until translucent

-      Add the mushroom bacon and gnocchi, toss for two minutes

-      Add the brandy, flambé, add the cream, simmer until reduced by half

-      Add the cheese and the herbs, continue to cook for three minutes, season

-      Divide onto four plates, enjoy!
