Instructions

Method

-Blend together 1 tablespoon of olive oil and butter and add it to a hot skillet

-Add onions and garlic to the skillet and sauté on medium heat

-In a saucepan, bring chicken stock to a simmer

-Pour contents from the skillet into a blender along with cauliflower, mashed potatoes, chicken stock, and half & half.

-Puree the mixture until smooth

-Pour in a serving bowl and top with the remaining olive oil

  • ½ white onion diced
  • ½ tablespoon fresh garlic minced
  • ½ head pre-boiled cauliflower floret
  • 1 cup ready-made mashed potatoes
  • 2 ½ cups chicken stock
  • ¼ cup half & half
