Filet Mignon with Jalapeño Sauce


Method For Steak

-       Generously season steak with salt, cayenne spice and pepper. Pack seasoning into the meat using your fingers, and coat steaks in oil

-       Place the steak on a hot grill and cook for 4 minutes on each side for medium-rare to medium or 5 minutes on each side for medium-well to well

-       Drizzle steaks with jalapeno steak sauce

Method for Jalapeno Sauce

-       In a small skillet, heat balsamic vinegar over low heat

-       Add the jalapenos and let steep for 5 minutes until the balsamic vinegar reduces and has a smooth and thick consistency

-       Strain the jalapenos from the sauce

  • 3 8 oz. petite filets with bone
  • 3 tablespoons grapeseed oil
  • Salt, cayenne spice and pepper to taste
  • ½ cup of balsamic vinegar
  • 2 tablespoons of jalapeno peppers, seeded and chopped
