Chargrilled Oysters

Ingredients provided by Felix’s Oyster Bar

Butter Sauce Ingredients

·      16 ounces liquid margarine

·      2 ounces 80/20 olive oil

·      1 tablespoon Worcestershire

·      1 tablespoon lemon juice

·      1 tablespoon white wine

·      1 tablespoon white pepper

·      1 tablespoon black pepper

·      1 tablespoon gran garlic

·      1 tablespoon gran onion

·      1tb Italian seasoning

·      1/4tsp liquid smoke

·      Crystal Hot Sauce 

Bread Crumb Topping Ingredients

·      8 ounces Italian bread crumbs

·      8 ounces parmesan cheese

Method 

·      Open Oysters, place them on an outdoor grill, and top with Bread Crumb mixture for a minute  

·      Create your Oyster sauce by wisking all ingredients together in a bowl and pouring over oysters on grill 

 

Buffalo Oysters

·      4 ounces chargrilled butter sauce (ingredients above)

·      4 ounces Crystal Hot Sauce

·      3 ounces bleu cheese crumbles for topping

·      Egg wash and corn flour for frying

Best I have ever eaten!!!! We were in NOLA 2 weeks ago and tried these they are Awesome!!!!!!

I tried the buffalo oysters. I had watched the show ... I melted the margarine, and added all the other ingredients. I whisked together 1 T. water and 1 egg and set aside, then I mixed 1/2 c. flour and 1/2 c. cornmeal to make the corn flour. I rinsed oysters (used fresh jar) and patted dry with paper towel, then dipped in butter sauce, then corn flour, then egg wash and corn flour and fried in deep fryer about 4 minutes until golden. When I removed them I dipped in a buffalo wing sauce..(you can mix together melted butter, squeeze of lemon and hot sauce) then topped with bleu cheese. They were so goooood.

Hot Damn! From Memobis, I ran this recipe, didn't have the bread crumbs, threw in cracker crumbs, in place of. Outstanding!! The cracker crumbs absorbed the sauce, then crusted over so beautifully. I have been a long time Chef Jeff fan, but that sauce is so versatile. It's too good to limit to oysters, I'm gonna try that on fish! Again Outstanding! From an old retired cop.
