Instructions

Dirty Rice Ingredients

·      2 tablespoon olive oil

·      1 tablespoon chopped onions

·      1 tablespoon bell peppers

·      1 tablespoon chopped celery

·      ½ tablespoon minced garlic

·      1 pound ground turkey

·      ½ teaspoon cayenne powder

·      ½ teaspoon chili powder

·      1/3 cup chicken stock

·      2 tablespoons chopped parsley

·      Grilled collard greens (directions below)

·      1 tablespoon sliced scallions

Method

- In large sauté pan, heat olive oil on medium high heat

- Add the onions, bell peppers, celery, and garlic and sauté for 5 minutes

- Add the ground turkey and cook for about 6 minutes or until browned

- Add the cayenne pepper and chili powder to pot and mix well

- Add the cooked brown rice and chicken stock and let simmer

-  Fold collard greens, parsley, and scallions into rice and simmer for 5 minutes

- Season to taste with salt and pepper

Collard Greens Ingredients

·      8 collard green leaves

·      2 tablespoon olive oil

·      ½ tablespoon salt

·      ½ tablespoon pepper

Method

- Drizzle collard greens with olive oil

-Season with salt and pepper

- Grill on each side for 4-5 minutes

- Add to dirty rice
