Coconut Cream Pie

Coconut Cream Pie

Recipe Provided by Betsy Foster from P’s and Q’s

Yields 1 deep dish pie, or 2 regular pies

Ingredients

1 prepared pastry crust, fully baked

1 c sugar

5 T cornstarch

1 t salt

3 c milk

1.5 c cream

8 egg yolks

splash pure vanilla extract

sweetened whipped cream, or Meringue

*For coconut add a splash of coconut extract, and a 14 oz. bag of flaked coconut

*For banana, you will need 2-3 sliced bananas

Method

·      In a medium saucepan, whisk together the dry ingredients

·      Add milk and cream to dry ingredients to combine

·      Stir constantly over medium heat until simmering

·      Remove from heat

·      Lightly beat egg yolks in a separate bowl

·      Slowly drizzle half the hot milk mixture in to the eggs while beating rapidly (helps to have a friend for this step)

·      Pour egg mixture back into the saucepan

·      Continue stirring constantly over medium heat until mixture comes to a full boil

·      Remove from heat and add vanilla

·      *For coconut add the coconut extract and coconut flakes

·      Let cool slightly and pour into prepared pie shell

·      *For banana, spoon a small amount of pastry cream into the bottom of the prepared pie shell and cover with sliced bananas, repeat alternating layers ending with pastry cream

·      Refrigerate at least 8 hrs or overnight

·      Top with lightly sweetened whipped cream, or fluffy meringue

Can we get the pie crust recipe for the Coconut Cream pie recipe that aired on 5/12/15 (Fox)? As Chef Jeff says; the crust is the foundation and that one looked delish!

Would Betsy also share her pie crust recipe? I agree with you, Jeff, that a tasty, flaky pie crust makes all the difference. Thank you also for Key Lime Pie recipe.
