Instructions

WHAT TO DO

1.    bring 1 Tablespoon olive oil in large pot to high heat 

2.   rub stew meat evenly with salt and pepper

3.   saute onion, stew meat, chorizo, garlic and potatoes until lightly seared

4.   add chicken stock and cook for 3-4 hours

5.    after cooking time, add collards and creole tomatoes for 5 minutes

6.   add salt and pepper to taste

7.   grate parmesan cheese and crushed red pepper directly on top bowl for garnish

Ingredients
  • 1 link sliced spanish chorizo
  • ½ bunch de-stemmed collards cut into 3 x 1/2 inch strips
  • ½ pound cooked yukon gold, skin on potatoes (cut into bite size chunks)
  • 1 pound Angus Stew meat cut into bite sized chunks and trimmed of fat
  • ½ onion small diced
  • 1 Quart chicken stock
  • 1 tablespoon minced roasted garlic
  • 1 small parmesan wedge (2 oz.)
  • ½ small diced creole tomato
  • 2 Tablespoon olive oil
  • 1 Tablespoon salt
  • 1 Tablespoon pepper
  • 1 Tablespoon chili flakes
