Black-Eyed Pea Soup

Instructions

Method

-      In a pot, simmer smoked turkey wings in chicken stock for 30 minutes

-      While turkey wings are simmering, heat olive oil in a cast iron skillet

-      Sauté red onion and celery in skillet

-      Add cumin to skillet

-      Add collard greens and kale to skillet

-      Season greens with salt and pepper

-      Add garlic

-      Add black-eyed peas

-      Add 1 cup of stock from simmering turkey wings to skillet, and let simmer

-      Add all ingredients from skillet into pot with turkey wings, and bring to simmer

-      Serve

  • 4 cups chicken stock
  • 2 cups black eyed peas
  • ¼ cup plus 2 tablespoons olive oil-butter blend
  • 3 garlic cloves, minced
  • 1 smoked turkey wing
  • 1 celery rib, chopped
  • ½ bunch kale, stems removed and chopped
  • ½ bunch collard greens, stems removed and chopped
  • ½ red onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

I have the same question. Should I use the uncooked or canned black-eyed peas?

Great! My husband said it will make you hurt yourself. Served it with corn bread. I used frozen field peas with snap, used homemade chicken stock. Loved it!
