Instructions

Quail and Blackening Seasoning Ingredients

·      3 Quail, semi boneless

·      2 Tablespoon Olive Oil

·      2 Tablespoon paprika

·      2 Tablespoon Cayenne

·      2 Tablespoon garlic powder

·      1 tablespoon dry thyme

·      2 Tablespoon brown sugar

·      2 Tablespoon black pepper

Method

- Whisk all the seasonings together in a bowl to create blackening seasoning

- Cut quail into quarters and place on skewer

- Sprinkle the blackening seasoning all over the quail

- Grill the skewered quail for about 5-6 minutes on each side

BBQ Sauce Ingredients

·      1/3 cup chopped onion

·      3 tablespoon butter

·      2 sprigs of thyme,

·      1/3 cup of apple cider vinegar

·      4 smoked Roma tomatoes

·      1 cup ketchup

·      1/3 cup brown sugar

·      ¼ cup molasses

·      ¼ cup Worcestershire sauce

·      1 tablespoon hot sauce

·      1 tablespoon chopped parsley

·      1 teaspoon salt

·      1 teaspoon pepper

 Method

- In a saucepan heat olive oil and butter on medium heat

- Add chopped onions and thyme to pot and sauté for 5 minutes

- Add the apple cider vinegar and simmer for 4 minutes

- Add the rest of the ingredients and simmer on low heat for 20 minutes   

- Use an immersion blender for a smooth consistency

- Brush barbecue sauce on the quail and serve
