Basmati Rice



-      Heat oil in a cast iron pot

-      Add diced onions and bay leaf to pot

-      Add olive-oil butter to pot, and stir

-      Add rice and chicken stock to pot, and bring to a simmer

-      Let simmer until all of the liquid is absorbed, about 20 minutes

-      Toss cooked rice with cilantro




  • 2 cups low-sodium chicken stock
  • 1 cup basmati rice
  • ½ cup diced onions
  • 2 tablespoons olive oil
  • 1 tablespoon olive-oil butter
  • 1 tablespoon chopped cilantro
  • 1 bay leaf


I used vegetable bouillon cubes since I'm vegetarian. I also did not have basmati rice but I did have jasmine. It's so awesome by itself that I've made it twice today.
