Instructions

Salad Ingredients

·      8 ounces bacon, cubed and rendered

·      2 cups arugula

·      2 eggs

·      1 head iceberg lettuce, chopped

·      1 bunch red leaf lettuce, chopped

·      1 yellow tomato, cut into wedges

·      ½ avocado, diced

·      3 tablespoons pecans

·      2 tablespoons chives

·      2 tablespoons olive oil-butter blend

Method

-      Heat 1 tablespoon of olive oil-butter blend in a skillet

-      Add bacon to skillet, and fry

-      Toss lettuces together in a bowl

-      Mix lettuces with ranch dressing, and season with pepper

-      Add bacon, pecans, chives, avocado and tomato to the lettuce mixture, and toss

-      In a skillet, melt 1 tablespoon of olive oil-butter blend, and fry the eggs

-      Serve fried eggs over salad

Ranch Dressing Ingredients

·      ¼ cup non-fat Greek yogurt

·      2 tablespoons light mayo

·      2 tablespoons buttermilk

·      2 tablespoons crumbled blue cheese

·      1 tablespoon apple cider vinegar

·      Juice from ½ lemon

·      Pinch of Cajun spice

·      Dash of Crystal Hot Sauce

·      Salt and pepper to taste

Method

-      Whisk all ingredients together until smooth and creamy
